Definition is Do, then you need an anagram of two words in the clue, one of which is 'incomplete'

Thanks geting. A tricky one. I almost made a mistake. Luckily got it correct.

Please help me in parsing / solving this cryptic clue -
"Mutton on plate with ale, perhaps Earl and Duke like crabs? (10)"

This is obscure. A two letter word for mutton, in printing, hence on plate, followed by a traditional English beer, and then two single letters. Crabby people can be described as this

Thanks Quisling. Could get the word. Eventhough I had the word earlier, I dismissed it thinking that two letter for mutton on plate is insufficient. A revisit after your parsing, made it clear.

Glad you got there. A mutton is a long dash, the width of a letter em, and a nut is a short dash, the width of a letter en in printing. It’s worth remembering, as they crop up occasionally

I should add that this is pretty high-level stuff. 99% of solvers, probably more, would not know these terms.
