Yeah that had just occurred to me. "Anna Sacher, most famous hotelier in the world" on Google. Hotel Sacher in Vienna, where the Torte was created. I think that wraps it up

To which clue does chaser apply? Assume raches at three.

barretter, yes, I agree that the author is not British. If you start with the first letter of 49, his first name can be traced in a meandering sequence. It's either a coincidence or perhaps the remnant of an earlier grid.

I discovered an error in one of my entries, which prevented the emergence of the thematically modified name. I see it now.

Anyone looking for final confirmation of the work will find the rest of the title in the preamble. It's the only thing that really confirms the work. Apologies if this has already been noted.

Hi Dryden

I thought it was only the author's last name in the diagonal nw to se.

It has the a and e removed as per all the other answers.

His first name doesn't have any of the letters to be removed. I can see it snakes around sort of below the surname but that looks a coincidence to my eyes.

And the "r"! I think the "Luigi" is just a coincidence. There's another "L" to the NE of 49 which could just as well be the start. I can also see "GOLF" and "LINK" in the top two rows but I don't think they have any relevance!

Oops yes and the 'r'.

It is academic anyway as someone just said to me as it doesn't need to be highlighted.

Son1..., thanks - I'd got it into my head that the answer began with a 'c'.
