Help please with 30a. There will be an extra letter in the clue. Poker to scour and beat nearly a third of black sheep’s wool (6)

If you've already considered that and want an actual hint, the def is in the latter part of the clue.

(having said that, I am yet to actually parse that one although I am 100% sure I have the right answer!)

I think it parses as follows. The extra letter is in the first word. The remaining letters of that word are a Scottish noun meaning the first 3 letters of the answer. Beat is used as a verb of 4 letters, way down in the Cambers entry, with the last letter missing.
Two pretty obscure fragments but the definition is very clear.

I meant “ scour and beat is used as a verb”. Sorry.
