Hello everyone. Please can anyone help with these?

1d: Reserved day in carvery, needing filling (5)
C - G - Y
Looks like CAGEY (reserved). I understand the CY (CARVERY with the 'filling' removed), but AGE for DAY seems strange. The only thing I can think of is a possible reference to "in this day and age". Any thoughts?

27d: Purveyor possibly managing stingy customers? (9)
B - E - E - P - R
BEEKEEPER? What does this have to do with PURVEYOR?

28d: Cut up fish and immediately start to ice on casting site (7,7)
- O - L - N - / S - A - I - N
Looks like POLLING STATION. I understand most of the parsing, except for STAT meaning IMMEDIATELY. Can anyone give chapter and verse for this, please?

28 D. Stat, instantly, immediately has its own line in Chambers. (It's short for statim, Latin)

Looks like LAST-GASP (desperate?). If so, how does it parse?

Can I echo a plea for an explanation of 1d: Reserved day in carvery, needing filling (5). Is day meant to be a synonym of age?

Also, don't understand 44a, where does the clue tell us to remove those particular letters?

StrangelyBrown, 'vanishes in seconds' indicates removing the second letters from Least Grasp, minimal understanding.

SB and The madwoman... Bradford's crossword dictionary lists Day under 'Age', so it's obviously featured in puzzles - though I can't find a speciifc example!
