I have T-H-T- so an exotic place would be TAHITI. I have "H" for hotel but why the reference to Bristol?

I've got Old Head (Head = principal), but I can't parse remainder

10d) Well outside measure by Sun editor ?E?S??
Is the S?? bit 'SED' (Sun editor)? If so, it still remains a mystery!

7. The definition is Bad, in food that's gone off, say. It starts with a three letter Count, verb, the French 'the' + the first letter of Dracula.

Looking at this clue I have "addled" as 7 across and I have 8 down "not a clue Brown" as Dunno with the Dun being brown. Is this wrong
