Ah, I think that's my favourite clue and last to parse. Is Bone-T enough of a hint? :)

The rice dish is the definition but by adding a T in it it becomes a bone in your leg.

I had trouble with 10A too. Not the answer, nor the process of arriving at it. But how exactly does 'T-bone quite the opposite' instruct you to do what needs to be done? In what way is anything the opposite of anything else?

Phil, 10 was my COD. It works in a mathematical sense with "-" as subtraction. Plus, that same solution was a thematic (9 across) in yesterday's Prize, albeit with a different and less obscure parsing. Familiarity likely helped me get it.

I enjoy doing these Everman puzzles, but find that too many of the clues are not carefully composed.

For example, the 10A T-bone clue was a great idea but very poorly executed. Likewise I am finding 21D (largish car) to be unparsable for me.

If I were I newcomer to cryptics, I would blame these problems on myself. But I began solving cryptic crosswords in 1976, and much more recently spent 20 years editing them for a major publication, so I believe I know what I'm talking about.
