Jono, I solved the clue last night, but only through using a wordwizard thing. I have to say I was completely underwhelmed. Sorry!

It’s been suggested that the hyphen is indicative of the dotted quaver - semi-quaver notation which is often how the first two notes are expressed.
I‘m not defending it by any means!

In the clue I think "gaining" is unnecessary if the answer is wend, but necessary if it is wind.

Yes, coming back from the pub involves a more curving and bending route than going there! That reminds me - have I told you that I sometimes leave home, walk a hundred yards, turn 90 degrees and then walk backwards for 40 yards. There is a rational explanation for this!
