Hi still struggling on with this.

Couple of things I could do with assistance on:

Is the breed of cattle clue- ayrshire?

What column do the A clues fit?

There are also a couple of clues I am stuck on

Leading exponent beginning to redesign Canada's symbol?

Its a plant- something linked to catnip in the Seychelles

King's head brought in so-so fizzy squash finally- this drink?

I have solved all the clues and filled the grid, but I have doubts about the final step. Are we supposed to reproduce the 6-letter word which appears in the allocation of letters to columns? If so, what's the point? Or am I missing something more subtle?
