21a "One taken from a genus of bulbs?" (6)

The solution to this is 'allium'. I realise that allium is a genus of plants that grow from bulbs but I cannot follow the parsing. Is anyone able to clarify this for me please?

A (from the clue) then LILIUM (genus) minus "I" (one taken from)
which gives A LLIUM
