The grid fill wasn't as daunting as it first looked. However, I've fallen at the last hurdle.
There are multiple possibilities for the unchecked letters in one of the names, unless I'm missing something.
I've tried modifying the 7-letter entries as per the message to no avail. Too early for spoilers, so I'll hope for that lightning bolt moment.

I'm pretty sure I'm there. I have the name and an appropriately modified 7 letter word. I think all I'm a little bit unsure of is 3 down.

What a cracking achievement by Sauce! Not easy to find an anagram for a Latin word, but once spotted it's a very accurate answer to those initial letters. And there's more! Bravo!

Ah, yes, just discovered the "more" Zabadak! I had missed it due to one incorrect letter. Even better!

Sang the “more” in King’s decades ago - happy memories. Can’t get the Latin bit though: the decades have blotted out any memory of Latin.

I struggled to find the Latin word too Jockie. In the end I simply eliminated all the 7 letter words which would not allow several letter changes. That only left one. Lovely piece.

I'm somewhat confused

I got the name very quickly. I haven't quite filled the whole grid yet but do have the achievement in the grid. I've deduced the instructions from the initial letters but it seems like the answer I have put in for one clue in section III must correspond to a different clue from that set for the instructions to work. Did anyone else have an issue like that?
