I have a full grid, parsed all the clues and got the instructions. Having carried those out the final part of the instructions seems to be a slightly tenuous depiction of what is required.

Jogamel, Fetish is the redundant word. Take alternate letters of "force club" (4 letters) plus espionage (beheaded). Last word is the definition. There are a lot of fiendish clues in this one.

It's an American term for a Mexican lady, Off is the extra word. It is anagram 4+2+1 from the first six words.
