Cliverjo, just an anagram. Removing joint = take away a letter, then anagram. The 'dishes' doesn't lead to anything specific, more a general cooking term.

Thanks DJAWHUFC. I had an incorrect entry at 13 down, which made things unnecessarily difficult for me.

I came to this late after getting back from a short holiday. I have read through all the very useful hints above about the endgame but could somebody please confirm that 1 down is not changed after the initial alteration, (i.e. that the grid entry starts with B), that the military hardware is entered below the grid and that the word from which that is derived is highlighted in the grid? If not any pointers in the right direction would be more than welcome.
