It's not an anagram. Took me ages to parse. It's one of those 'reverse clues' where part of the solution is itself an instruction. Hard to say more without being too explicit.

A deer is an elk+c for caught+it's, all reversed and then followed by the word 'back' to say you have reversed it.

8D is an anag, yes, def is 'press'.

19a, it's a double def.

16A: I'm not sure of the parsing. I think it's bawdy Paulian double def.
