I've finally completed the quiz with much appreciated help from here, but cannot see the parsing of two clues: 54. To figure out how a change of menu leads to having a distinctive flavour (8) I have numeracy but that's a noun whereas the definition indicates a verb. 73. Establish a brief course of instruction for American teachers. (9) for which I have "institute" without knowing why.
Are my answers correct?
One meaning of "institute" in Merriam Webster, is,
"a usually brief intensive course of instruction on selected topics relating to a particular field."
Looks like we have the right answers but I feel that 54 is grammatically faulty and 73 somewhat obscure. Should be possible to solve clues logically or with average general knowledge in my view.

Thanks ab. I found the word "racy" relating to wine, but my problem is that "numeracy" does not equate to "to figure out how". Would not be acceptable in a crossword.
I have a different answer. Same beginning but instead of racy I have one of the 5 "tastes" in reverse for the remaining 4 letters - same problem though it doesn't really equate to figure out mmmmmm not sure?
I Hope the lucky people who have so speedily finished The Learning Curve will continue to monitor it and help the not so lucky to answer questions and also finish the quiz.
