I can't work out the relevance of 'copper' to the following answer:

'Hasty copper sorry to get involved (7)'

CURSORY

I get that hasty = cursory, but other than that I'm stumped.

Chemical symbol for copper is Cu.

Cu - chemical symbol for the element copper, then anagram "sorry"

Doh! I was only thinking of copper=policeman. The metal didn't enter my head. Thank you!
