How does aspirate work?

10a. A Parisian doesn't like to poach.

I have aspirated because I can't see what else it might be, but I can't parse it. I wanted un (a in French) to be there somewhere, but that didn't work. Any explanations please.

I also am struggling to parse 10ac - thanks to anyone who can come to the rescue!

I agree it's probably ASPIRATE, but where is the definitional part of the clue?
