Now I can see firm date, but surely that is giving a fixed time? Can anyone help or explain!

Won't give as in won't give in, firm.

You're correct with Firm Date - but a 'firm date' won't give, it'll feel firm to the touch! It's easier if you break the clue up slightly - a fruit that won't give = a fixed delivery time, firm date.
