Thank you for this Jolan and welcome back. Hope you are well.
Rarely get the chance to indulge on Tuesdays and this was once again a treat.
Here is my stab at it-

1. Pulse lover? (5-5)- HEART THROB?
Double definition – a pulse is a “heart throb” as is a lover?

2. Old Persian prince and son with Asian maidservant and Indian butler (9) – KHANSAMAH?
Khan – old Persian prince + s for son and amah for Asian maidservant gives Khan s amah in Chambers as an Indian butler?

3. He smears fillings with soybeans and millet, preferring double-centres (8) – LIBELLER?
Middle letters (fillings, double centres) of FilLIngs, soyBEan, miLLet and prefERring gives libeller, one who smears?

4. Amplify its sound level (4) – RAZE?
Raise- amplify sounds like raze – to level?

5. Secretly cut her need to run off (5-3-7) UNDER THE COUNTER?
Anagram of “cut her need to run” gives “under the counter” – secretly?

Thanks jolan - I missed your Tuesday offerings.
I had the same three as jazzy. #2 is a completely new word for me - I even tried Googling "Indian butler", but nothing useful came up on the first couple of pages.
"Raze" isn't quite as good as "cleave" in having two opposite meanings, but the homophones certainly do!
