But, can't parse 'stinger'

Bass = singer (or fish) with last of fruit = t inside = stinger = cocktail

I have put SWEETHEART, but the parsing escapes me ???

dessert = sweet - heart = pity
Dear = sweetheart

But of course! I'm obviously being particularly dim today!!
