It was indeed an easy one and though I hadn't figured out a few parsings, such as that homophobe on 21a, and just now figured out the "two extremes" in 19d, I'm left with just 10d, Cake decorator's instructions returned with just 2 cuts, xCxR. It may be obvious but why? A bit of Cockney in it?

Cake decorator is the definition. Read in reverse (returned) we have cooking instructions, minus the last two letters (cut twice).
