We used to know the George well. Coincidentally when we moved to Lancashire (Yorkshire really - a disputed area), our new next-door-neighbour had as a frequent visitor an ex manager of the pub.

Apologies for the obscurities, they are all in Chambers.

For ‘setter’ Chambers has…
1. Someone who or something that sets
2. A dog that sets
3. A dog of a breed derived from the spaniel and (probably) pointer
4. A person who finds victims for thieves, etc
5. A spy

Tyke, Chris, I know the George well. Borough Market is a stone’s throw from me.

Got this quickly by chance...my first guess at layout / orientation happened to work.
Without Chambers, my question marks were "sprew" and "spy".
Sprew seemed plausible for asparagus. I still don't understand spy=setter, but that's the downside of being too cheap to spring for Chambers...🤣

When the Shard was nearly finished, but not yet open, the staff from the George were invited up it - one of the barmaids showed us the photos she took - I`ve not been in the building ... yet!

Thanks, Jay/Jono. The clue for thrust was particularly clever. Add me to the list who didn't know setter = spy. Should have got out my Chambers.
