Scots for call is CA (see Chambers)

An anagram (cook) of (CA LIZA RECIPE)* gives CAPERCAILZIE, a large grouse

Best I can come up with!

I would never have got that one! Can anyone explain 23ac for me?

Sign for 11 numbers (7) (the answer for 11 being “stag”)

I have ENDORSE which fits “sign” but I can’t see he rest.

I thought the answer to 15d was recipe (and this is given on other sites).
No wonder I couldn't see it.

Used to do the wee stinker years ago , quite often a real struggle. Never did win the T shirt.

Anyway I assume 23a is an anagram of nos (numbers) and deer (stag).

Call Liza with this to cook big ... (6)

16d) ... carp (6) and the answer is grouse which helps to confirm Jono's solution.
