We also struggled parsing 21a - Stone me, once having settled in illegal state (11) and we also think it’s criminality?

Help also needed parsing 1d - follower of W Churchill’s not completely taken stock (6) which is cattle = stock? We’re clearly missing something! Help will be appreciated.
Enjoyed this one, though.

The "CRIMINALITY " answer appears to be "alit" (settled), inside of "criminy", an obscure expression equating to "stone me".

Many thanks Malone. Would never have got to chaliapin myself.
One more if you’d be so kind:
56a Consumable product of melting numismatist’s prize
RAREBIT. Is this a reference to bitcoins? And why melting?

It's melted cheese on toast (actually it should be more complicated than that!)
A rare bit would be a prize for a numismatist- a coin collector
