39. Anagram of 'ears stick up' - unusual first name of the tree

No-one seems to have asked for any help with:

4. It is precisely defined by a popular bidding convention - I assumed it was to do with bridge and have looked through loads of lists of bidding conventions and am none the wiser so maybe on the wrong track (5)

64. Coil up in the trees where you find Tom and a lady otter entwined (4.2.3.7). I know a lady otter is a sow and a book title immediately came to mind but i can't fit 'Tom' in.

Saxon - I saw CRASH in the list of bidding conventions and obviously ash is there but how do you explain the CR?

I was thinking of that Kenneth Grahame book but as I said, I couldn't find an explanation for Tom.

In the Rainbow cryptic quizzes everything has a reason to be there.

Just thought of something - there is pussy willow and Tom is a cat so I'm going with that for the explanation.
