I thought "knee-stops" too, but (a) I can't parse it, (b) I've not found it in OneLook Dictionary, Wikipedia, or Google, (c) my wife (ex-organist) doesn't know the term.

Your wife may know the term "knee swell" rather than "knee stop". I used to be an organist (of sorts !) but am a little out of practice now.

... and "st" for silence is something I have never come across in cryptics before.

A "knee swell" is a possibility on an organ, but a swell control however operated is nothing to do with an organ stop!

I have had a chance to look in Chambers 12th and it shows knee stop (also known as knee swell) I know all about swollen knees. :0)
