THERE turns into THREE by moving the first E to the bottom? Not convinced.

My other thought was Ether, number, with the 'e' at the front moving to the end.

MCINTOSH REDS - variety of apple

I haven't entirely parsed it yet - there is an anagram of HOST and MINCE in there

I think the other one is SHREWD but I also haven't parsed it except the D is head of (D)epartment
