The second one could be 'hardened' - I find your wee dashes hard to make out. Maybe it's just personal preference, but I think ??? for missing letters works better!

Should have added - pemmican is a mixture of dried meat and fat, and the word has 'pecan'(nut)+m+m+i (the 1st letter in 'illness')
