Hi FRANCIS
I've looked up a list of SWiss cheeses, and although there were some interesting discoveries (I hadn't realised that raclette was Swiss, not French), no inspiration struck.

I think you might as well just leave the clue standing, to see if anyone with more penetration joins in - if I solve it, then the two of us will both be "out"
