In the whole crossword there are a number of letters that have not been clued. Identify these and do another grid stare.

Finished at last. A clever bit at the end to see but the title and the last word of the revealed message only lead to it in a very obscure way. There could have been many other considerations. And with respect to phil535, it's not the whole crossword that's relevant but just the 7 special ones. And I understand what posting 16 was about now!

One final thought. Unless I am missing something (yet again) I can fill 19 cells in different combinations each of which effects the appropriate capture and provides the appropriately shaped and symmetrical enclosure. One looks to be the most appropriate but there are others. Is there something that determines that there can only be one correct answer?

Notrab - if you have the right bottle there is only one ordered set of letters that completely surrounds the central five letters. Incidentally be careful when entering your answer to 43ac. You can only get the correct fourth letter from the message.

I must admit that I had to check in Chambers to make sure of the spelling of the bottle - not obvious if you are teetotal like me!
