Glad to assist AJT - it didn't ring any bells with me either even though I must have drank the stuff in those Eger caves.

Have finished this (I think) except for 1d and 27d.
I only have 3 wines - does this mean 1d and 27d are 2 of the 5?
Also have entered "AABCFHILNRSU" as letters for 21ac - can someone confirm if I am right (or not) - if these are the right letters (plus 'K')I haven't a clue what the wine is (assuming it is 1 of the 5) - any hints appreciated!

Thanks all for your hints (to date). This is one xword I am getting very cross about as puck is way over my head. Maybe I am not parsing the sober clues properly.
e.g. 25d I thought the answer is the partner of Sooty;
So I thought 31a began with the letter P and ended in Y. That can't be if this clue is a non-sober one as Y doesn't fit into the equation; well it does if it's the unknown.
so far I have never tasted Puck's choice of 26 downs as they are not my kind of 26 down although I still have a few more to find.
So for me it's off to the fridge for my own kind of dry white 26 down.

Neil - 31ac does begn with a P and end with a Y. You don't have to take anything out of these non-special clues. It just means that the letters from 18ac are ignored in the clue.

I have one clue left to complete (after help from yourselves) it is 27d which is one of the wines I have _o_y and I understand the special instructions etc but I just do not know what the wine is and can't get it from the clue either.
