Two today..
"Good Scots, say, hold party for blind helper" = 'guide dog'. (Readers of The Broons and Oor Wullie will know that 'good' is spelt 'guid' therein. I'm a Scot and I've never in my puff heard anyone pronounce 'good' like that...)
"Heading north, a German carries bitter salt" = 'nitrate'.

1. GUID (Scots good)+ E.G. (say) holding DO (party) = guide dog.

2. The heading North bit means the clue is read from the bottom up. EIN (one in German) carries TART (bitter) = NI(TRAT)E.
