OK folks - have finally worked it out. Tough going crossword this week and full of holes!

Indeed - sorry for the cryptic directions, but I prefer not to give teh game away too easily.

Finished now (probably), but found the endplay very unsatisfactory as the ****s could be made from thematic material in various other guises throughout the grid as there is no definitive guidance ;-(
