For 6a the definition is check and it parses as s for bit of sour followed by a 3-letter word for cream. Then an extra letter is added for the entry.

Thanks, darla. Of course. Brain freeze. I was thinking that it had to undergo the same transformation as 9d so was looking for a five-letter answer. Had the right entry but couldn’t see why.
