Now I've put in okay (okra), but I'm having second thoughts as it doesn't help with the last one.

A script that includes old piece of Holy Writ (4)
-(O)-S
The O (second letter) comes from the first clue. The Holy Writ is the bible - is the answer JOBS or should it be AMOS, giving M-A- for the first clue?

AMOS looked right, the A and O seemed to come from the clue and I hadn't spotted the MS (manuscript) link.

MEAT seems right. I couldn't see past MEAL if AMOS was right, but I think you've got it.
