Am I the only one who is having some difficulty with this EV? Have 4 of the 'jobs' and have placed 3 of them and my SW corner is looking good (even tho' I can't parse 18d tho' I think the missing letter is F) but the rest of the grid is looking very sad. 8d, 27a & 20a are being particularly elusive (and irritating) can anyone help please?

In 18, the 'rule-keeper' is a small word, a man with a whistle!

27 Just an Irish name. A six-letter word for 'collapsed', destroyed. drop the second half.

20 Who'd give up, wouldn't eat, tripe and trotters?

8. I couldn't parse this properly. The definition is 'book' as a verb, used in copshops! Your L is wrong.

8D - the extra letter is a P. The word 'prest'' is Shakespearean for 'ready' and supports the shortened form of Arabian.

Thanks for the parsing, Pegster. I was perfectly happy with my answer, so didn't bother trying!

No, cloverjo, your letters are correct. Take out the 'tune' and you will have the first three letters of the six-letter word, meaning collapsed, fallen etc.
