More birds . .

1. Whilst in New Zealand Mr Connors took aim at a bird (8)
2. We watched her and Peter race around the grape vines in Peru (12)
3. The fiery detail was unusually kept quiet until the bill was made law (5-6-7)

Guessing that the birds are native to the countries referred to . .

And in #3, I am guessing that the middle word of the answer is 'tailed' (anagram of 'detail')

But I could be well wide of the mark . .

2. Earthcreeper
Anagram of 'her Peter race'

1. Would 'chuck' be in there somewhere?
There is a Witchuck, but I can't fit the rest of it to the clue.

Thanks Matt . .

They don't parse that well . . and the exotic bird names don't readily spring to mind (well my mind anyway)
