That would be TENT, then - TET offensive (Vietnamese War) around N for New; old name for a type of red wine from southern Spain (possibly derived from "tinto", Spanish for "red"?)

Ingenious! I knew that vino tinto was red wine, but couldn't see a connection. I was wondering if the answer might be TANK: a tank offensive, and "STANK" without the S - but why without the S?
I find Dean Mayer and David McLean the hardest setters in the Sunday Times, especially the former.
