I think the 1st 2 are croissant and trumpet but can't see why.

the first two youve got right, the third is jeremiad, though im not entirely sure why.

I still don't really understand the wordplay for the 1st two though.

Hamper=impede/thwart=cross. Containing i (one)=croiss+ant (worker). Croiss is on the head of ant because it's a down clue.

Still thinking about the other one.

Fit of temper=tantrum. Lash=tan. take tan out=trum. +pet for bad mood. Trumpet= shout.
