I have seen the published answers to these clues and don't understand - please help !
7a "hearing and seeing red piano going" (7) - answer "sitting"
8a "restaurant's big cheese hotel disposed of"(6,1)
answer - "Maitre D" - yes I know a restaurant's big cheese is a maitre d, but where does the hotel disposed of come in ?

Seeing red - spitting without p for piano gives "sitting" hearing?

It's Maitre d'Hotel take away the H(otel)

sitting = hearing
seeing red = spitting minus P(iano)

The full title of the Maître d' is Maître d'hôtel?
