Have completed, but would like to understand parsing of 28a. 'Maitre d' for getting central piece in oven?'. I have' heated (r?), but don't fully get it!

I can see an anagram of irate in the middle?????

I'm pretty sure it's heater. A synonym for maitre d', 2 words, 10 letters, with middle 4 letters removed.

Thank you, Peterm. I have actually got 'heater', not 'heated' written in the grid, as I originally posted, but was not 100% on why, except that a heater is a necessary 'centre' to any oven. Thanks to your help, it now makes full sense!

PS, Peterm - all the time I was looking at the clue, I was not sure, with my eyesight, whether it read 'forgetting' or 'for getting'...!
