When I parsed it I looked it up in Chambers!

It's 'sties' in the middle of 'twistiest' - so I don't think it really matters whether we see it as the plural of 'sty' or the plural of 'stie'.

Hi, malone, the clue reads 'pen straight'?

Thanks, I saw that - but I couldn't work out where the second 's' (twi stie (s) t) came from. My subconscious must have decided that it was really 'pens'.Sorry!

I took the S to be abb. of 'straight' but I can't see it in Chambers so it may be wrong parsing.

I'd checked Chambers earlier (re 's'/straight) - I still don't like having an unexplained letter in my correct answer.
