Although it makes sense - "say" around "g", I don't think it is a word, and anyway if it were to be pronounced correctly it should be spelled "sagey", surely?

Sorry - not in my (old) version of Chambers - I did check! I still think that an adjective derived from "sage" should be "sagey".

I wonder if one should spell a slightly wise man as sagey?LOL

And I think if I came across "sagy" to read, I would pronounce it with a hard "g" (i.e. rather like "saggy")!
