The answer, I'm sure is UNNERVING but I haven't any idea why !!
All the letters in my answer are OK

Help please !!

Pondering the wordplay. Check your crossing letters.

"minion" could be underling but I don't see how that could change to unnerving

SWEET could be DARLING, requiring a change of the first vowel.
Still don't get it.

You're right. The other bit is that the clue says it is NOT sweet which leads to UN DARLING

although both answers could feasibly fit the clue : "Close of Day", one hears
