Not quite getting the word play on these

27a) Catch chap giving richer course material to the Dutch (5) S - R - T. Sprat?

19d) Goddess to destroy American poet's rhythm? (7) D - M - T - R. Demeter?

Also can't quite fully grasp 5 Down, I've seen it answered as EXTINCT

5d) Sometime around one, case in town court finished (7) E - T - N - T.

Off to work now, will pop back on tonight

19d just means to ruin poetic meter (American spelling) rather than metre, I assume.

hi les40,hope your well?.27a i presume SPRAT.as in catch{small herring],and dutch[cockney rhyming slang for wife].jack sprat could eat no fat,his wife could eat no leen!!.hope its any help?

Re extinct, I assume EX (former or sometime) and one and N (neuter case) inside T and CT.

Correction: N for nominative (usually nom but sometimes just n). Even though one sees terms like neuter-case endings this is probably what is meant.

The explanation for the wordplay of EXTINCT has gone right over my head, I've never even heard of neuter-case, but just looked it up and, well, I never studied Latin nouns.
I think tha clue was mighty unfair.
