All done except for 1 & 27d.

Are they connected in some way - how?

The clues are-
1d This setter has the Italian equivalent of appellation controlee (4)
27d Tango ? Sure ! (4)

1d is DEMO, which is MEDOC, with the C removed as per the instructions and put in alphabetical order. 27d is AOTY, which is TOKAY treated in the same way (removing K this time).
