waitress only seems to work if the wording was 'i start to think' or something similar?

as the clues are anagrams I thought the T came from the last letter of restaurant and the think was irrelevant

Surely the missing t and c don't come from the last letters of restauranT and picniC, eh? Maybe they're not anagrams of complete words just of consecutive letters, eh?
